Dinner and a Play(time)...

Yesterday morning, I decided to make my husband's favorite dish, Adobe Pie. This also happens to be my friend, Maria's, favorite dish. So when I knocked on her door yesterday morning to invite her to lunch, she jumped at the opportunity. I told her lunch was at 1pm, and she arrived promptly at 1:30 (which is early for Mexican time). I was quite proud of her. Also, its easy to forgive someone who brings a bottle of white wine with them. 

Adobe pie is a cornmeal pie filled with a layer of poblano pesto and chicken with corn. I make a 3 chili sauce and a roasted red pepper sauce to go over the top. The red pepper sauce is the

First Day at the Beach...

Maybe Seth and I were just a pinch over protective of Taelyn when it came to taking her to the beach. I don't know why? We aren't that way with anything else. She's climbing on something? Well I guess when she falls she'll learn. She's eating dirt? She'll  realize it taste awful and stop. She put her hand in the door and closed it? Well I suppose she'll figure out that hurts. But when it came to the ocean, we became these over protective, fearful parents that wanted to wait until she was 40 or something.

One of my friends told me that her twins were going to the beach since they were 6 months. "So what if they eat sand. Everything comes out in the end ok, so it must be alright." We see Mexicans take their newborns to the beach all the time. Newborns! Its water, sand, and sun. All good healthy things

End of a Holiday...

Seth and I planned on going to Akumal for a date day about 2 weeks ago. I was all pepped and excited to hang on the beach and chill on a weekday since its much calmer than weekends. So on the morning of when I found out it was a public holiday celebrating Constitution Day, I was thinking about how packed the beach was going to be and debating whether we should change to another day. Well, I'm glad I didn't because we ended up having a great time, and the beach wasn't busy at all. It seems it was tourists day at Akumal and there were very few locals there at all. It seems all the Mexicans were celebrating the day off

Guess Who Got a New Bike Seat?...


We've had our bikes for almost a year now, but we rarely use them. We had my mother-in-law bring a baby trailer when she was visiting in May. But, alas, one of the wheels was broken, and we had to wait until we went back to the US for to get the replacement part. By the time we got the replacement part, Seth got busy with work, and it never got fixed. So we have a brand spankin' new bike trailer sitting in the guest room. Oh bother!

My property manager came across an awesome bike seat at one of the sports stores on sale. Don't you know I went right up and bought it because bike seats are darn expensive here! It doesn't matter if your a local or expat, you're still paying a pretty penny for one. Most of them are cheap grey plastic with no cushion. This one

Fun Day in Cancun...

Now that Seth is not working every waking minute, we have so much more time to play again. I missed being able to just hop in the car and take a drive around to see things. Sunday, I wanted to drive to Cancun in order to see the bazaar at La Casa de Cultural. There was a jewelry maker that was going to be there that I specifically wanted to see to buy some Christmas presents. I'll tell you about her in another post because I just love her stuff! Good Times...

It seems like my days are getting shorter and shorter. Taelyn sleeps in so much later now. We don't even get out the door for our morning walk until sometimes 9:15. I blink my eyes, and the day is just gone! Now that Seth is done with his app, he has so much more free time. I don't feel like a single parent anymore, and we get to spend whole days together as a family.
